Zucchini bread.
Yuck, that sounds disgusting.
Well, to be quite frank, that is exactly what I thought when my mom first made it. And to be quite frank again, it is not disgusting.
So, I made this recipe again and decided to share it with you and the coffee stand.
This recipe actually complements coffee quite well, even though the zucchini and the rich, bittersweet coffee seem to be a bas combination.
Despite what many believed, including me, this bread actually came through.
Enjoy.

Chocolate
Zucchini Bread
Ingredients:
3 eggs
1 cup of extra virgin olive oil
2 cups sugar
2 cups grated zucchini
2 t. vanilla extract
3 cups flour
1 t. baking soda
1 t. salt
1/2 t. cinnamon
1/2 to 1 cup chocolate chips
1/4 t. baking powder

Preheat oven to 325 degrees. Beat eggs until light and fluffy. Add oil, sugar, zucchini and vanilla. Mix well.
In a separate bowl, mix together flour, baking soda, salt, cinnamon and baking powder.
Add flour mix and beat very gradually into egg mix. Blend.
Pour into two greased pans and bake for one hour.
Let cool for one hour.
